The sun did not die. It withdrew, which was worse.
The Kojiki describes Amaterasu responding by going into a cave and pulling a stone door shut behind her, and the telling is careful that this is a withdrawal rather than a defeat. Heaven and the reed plains go dark together. Calamities multiply, the voices of malign kami fill the air like flies, and nothing grows. Eight hundred kami gather in the dry riverbed to work out what to do about a door that cannot be forced. It is a strike, essentially, and strength is no answer to it.
